A fresh wave of breakfast, brunch, and lunch has arrived in the Capital City as First Watch officially opened its newest restaurant in Dover on Monday, September 22. The award-winning chain, known for its chef-inspired menu and rotating seasonal offerings, has set up shop at 40 N. Dupont Hwy. The new 5,200-square-foot location seats more than 180 guests and includes both a patio and an interior bar.
First Watch has built a strong following for its modern spin on breakfast and brunch. Dishes are made to order with fresh ingredients and without heat lamps, microwaves, or deep fryers. Guests will find classics like omelets and The Traditional, alongside inventive favorites such as Avocado Toast, Farmhouse Hash, Lemon Ricotta Pancakes, Superfood Kale Salad, and the fan-favorite Million Dollar Bacon.
The Dover team begins each morning juicing fresh fruits and vegetables for signature juices, and diners can sip socially responsible Project Sunrise coffee, sourced from women coffee farmers in South America. As part of the grand opening celebration, customers who dine at the Dover location between September 22 and September 26 will enjoy unlimited Project Sunrise coffee with their meal.
The restaurant will employ about 30 people and operate on a single-shift schedule, aligning with First Watch’s “No Night Shifts Ever” approach that prioritizes work-life balance. It will be open daily from 7 a.m. to 2:30 p.m. for pickup, delivery, and dine-in service. Guests can join a digital waitlist or place orders online at firstwatch.com.
